I do love me some pizza, and my bf loves pizza, too. Since we're both vegan now (or the less scary weirdo sounding "eating a plant based diet") we've been ordering some pizzas with no cheese. They are usually pretty tasty (not the one we had at Mandaloun, though) and the way you feel AFTER eating them is much better, but I'm not sure they really satisfy a strong pizza craving.
Enter page 131 of Vegan With a Vengeance. Oooh...it's that scary V-word again. Yesterday I made the pizza you see pictured above (should have used a camera with a flash, I know!) the "Isa Pizza", named after the cookbook's author. This pizza has a tomato based pizza sauce AND pesto, AND tofu ricotta AND mushrooms and kalamata olives. Mmmm...I'm hungry just thinking about it. The dough was pretty fun to make, too. I want to try using a whole wheat dough next time...add some wholesome goodness to the crust...but I tell ya, that pizza was sooooooo good! Fresh and hot out of the oven you could NOT tell the difference between "real" ricotta and tofu ricotta.
Now I have to try page 134, Potato and Tempeh Sausage Pizza! I'm actually putting some soy cheese on this one I think, since I ordered something called "Sheeze" that is supposed to be pretty melty. Mmm...mmmm...mmmm! Then I tackle the veganization of our chicago-style deep dish pizza. City of Chicago, please don't sue me for calling it "Chicago-style" and then not using any dairy cheese in it.
